Hey family! In today's video we're doing some spring Farmhouse Cookin'! We've got an abundance of eggs this spring so we're trying out different ways to use them. On Sunday morning I made a big Omelet Skillet! This is perfect for when you want all the flavors of an omelet, but don't have the time to make individual ones! The next day we make a Farmhouse Egg Salad for lunch. Even though we just added a few simple things to a normal egg salad recipe, it definitely made it fresher and springier! Omelet Skillet Ingredients: 8 eggs 1/4 cup milk salt & pepper to taste 1 green bell pepper, diced 3 slices of breakfast ham, diced 2 tablespoons butter 1 cup shredded cheddar cheese Directions: Melt butter in a large skillet over medium heat. Add peppers and ham and cook for 3-4 minutes. In a large bowl whisk the eggs, milk, salt, and pepper. Pour egg mixture into skillet with ham and peppers. Scramble until eggs are almost done to your liking then add the cheese on top. Cover and turn the heat to low. Cook just long enough to melt the cheese. Farmhouse Egg Salad Ingredients: 8 boiled eggs, diced salt and pepper to taste 1/2 cup mayo 1 tablespoon red pepper flakes 2 tablespoons sweet relish 1 large cucumber diced, or two small ones 1 or 2 celery ribs, diced 1 tablespoon pimentos 1/2 red onion, diced Directions: Mix all ingredients in a large bowl. Refrigerate until ready to serve.
