Ingredients - 470g type ‘00’ flour - 10g sea salt - 7g dry yeast - 7g caster sugar - 330g warm water Method 1. In a jar, dissolve the sugar and yeast in the water. 2. Then in a mixing bowl of a stand mixer, add the flour and salt. Use the hook attachment and turn the mixer on to med-low. 3. Slowly pour in the water and mix the dough for 5-6 minutes or until you have a smooth dough. Remove from the bowl and shape into a tight ball. 4. Drizzle some oil into the bowl and add the dough back to the bowl. Cover with a damp towel and let stand for 1 hour or until l it has doubled in size. 5. Remove from the bowl and knead the dough for 1 minute. Then cut into 4 even pieces, roll tightly and place on an oiled tray. Cover with a towel and let rest for 1 hour. 6. When it's time to cook, stretch the dough like a pizza, then add your fillings. I used roasted sweet peppers, ricotta and buffalo mozzarella. 7. Fold over to a 1/2 moon shape and seal the edge well. 8. Place into a pizza oven, (or you can use your kitchen oven with a pizza stone of full temp) and cook until you have a good colour, it's hard to give a time as it varies for different ovens but about 2-5 minutes. 9. Serve with some marinara sauce if you like and enjoy!
