Here’s our take on Gujiya; a sweet deep-fried flaky dumpling stuffed with khoya and mixed nuts made with the goodness of Olper’s Full Cream Milk Powder. #happycookingtoyou #foodfusion # #Olpers #OlpersMilkPowder #happycookingtoyou #digitalammi #digitalmom Written Recipe: https://bit.ly/3MSUgHc Recipe in English: Ingredients: Prepare Filling: -Olper’s Tarrka Desi Ghee 1 tbs -Water ¼ Cup -Olper’s Milk powder 1 & ½ Cup -Olper’s Tarrka Desi Ghee 1 tbs -Sooji (Semolina) 4 tbs -Olper’s Tarrka Desi Ghee 1 tbs -Khopra (Desiccated coconut) ¼ Cup -Pista (Pistachios) chopped 2-3 tbs -Badam (Almonds) chopped 2-3 tbs -Kishmish (Raisins) 2-3 tbs -Elaichi powder (Cardamom powder) 1 tsp -Sugar powdered ½ Cup Prepare Dough: -Maida (All-purpose flour) sifted 3 Cups -Namak (Salt) ¼ tsp -Olper’s Tarrka Desi Ghee ½ Cup -Water ¾ Cup or as required -Cooking oil for frying -Sheera (Sugar syrup) warm as required -Dry nuts chopped -Chandi warq (Silver edible leaf) Directions: Prepare Filling: -In a frying pan,add desi ghee & let it melt. -Add water,milk powder,mix well & cook on low flame until dough is formed (4-5 minutes) & take out in a bowl. -In the same frying pan,add desi ghee & let it melt. -Add semolina & dry roast on low flame for 4-5 minutes & take out in the same bowl. -In the same frying pan,add desi ghee & let it melt. -Add desiccated coconut,pistachios,almonds,mix well & dry roast on low flame for 2 minutes. -Add raisins,cardamom powder,mix well & dry roast for 2-3 minutes & take out in the same bowl then mix until well combined. -Let it cool completely. -Add sugar,mix well & set aside. Prepare Dough: -In a bowl,add all-purpose flour,salt & mix well. -Add desi ghee & mix well until it crumbles. -Gradually add water,mix well & knead until dough is formed,cover & let it rest for 30 minutes. -Knead dough until smooth then divide into two half,take one part & make a ball then roll out with the help of rolling pin. -Cut 4-inch round circles with the help of cookie cutter. -On each round dough,add prepared filling (1 tbs),apply water at the edges then flip the dough making D shape,press & seal with fork and make design with the help of wooden skewer (makes 40-42). -In a wok,heat cooking oil & fry on low flame until golden & crispy. -After frying,soak them in warm sugar syrup for 2 minutes. -Garnish with dry nuts,silver edible leaf & serve! Prepare Dough: -Bowl mein maida aur namak dal ker ache tarhan mix karein. -Desi ghee dal dein aur crumble ho janay tak ache tarhan mix ker lein. -Thora thora ker ka pani shamil karein aur ghond ker dough tayyar ker lein aur dhak ker 30 minutes kliya chor dein. -Dough ko smooth hunay tak dubara ghond lein phir do hisson mein divide ker lein,ek part lein aur rolling pin ki madad sa bail lein. -Cookie cutter ki madad sa 4-inch round circles cut ker lein. -Round dough per tayyar filling (1 tbs) dal ker edges per pani laga lein aur dough ko flip ker ka D shape bana lein,fork ki madad sa press ker ka seal karein aur wooden skewer ki madad sa design bana lein (makes 40-42). -Karahi mein cooking oil garam karein aur halki ancch per golden & crispy ho jay tak fry ker lein. -Frying ka bad warm sheeray mein 2 minutes kliya soak ker lein. -Dry nuts aur chandi warq sa garnish ker ka serve karein!
