Is there anything better than crispy pork belly? In this video i'm going to show you how to make chicharron tacos! The crispy pork, the creamy guacamole and the fresh, zingy, chilli salsa was an incredible combination! Here's the guacamole recipe below: - 1 ripe avocado - 3 cloves minced garlic - 1 tablespoon finely diced red onion - 1-2 tablespoons of finely diced tomato - 1 teaspoon worth of finely diced coriander - Juice of 1/2 lime - Pinch of salt and pepper Here's the chilli pineapple salsa recipe below: - 3 tablespoons of finely diced pineapple - 1 finely sliced red chilli - 1 tablespoon of finely diced tomato - 1 tablespoon of finely diced green jalapeno - 1 tablespoon of finely diced white onion - Juice of 1/2 a lime - Pinch of salt and pepper With the pork belly, I smoked it for around an hour over pecan wood, then sliced it into strips and deep fried it. The first fry was at 180c for around 3 minutes, then the second fry was at 240c for around 2-3 minutes. You should notice your cracking pop and form straight away at 240c.
