I’m usually pretty OK with hot weather, but I’ve already succumbed this year. So today, I prepared simple summer dishes with the least cooking possible. Basil tomato cream cheese sandwich and basil tomato udon made with home-grown basil and Chungmu gimbap. The Chungmu gimbap is a kind of gimbap from the Chungmu region (now Tongyeong). Gimbap isn’t so recommended in summer as it can go sour so quick, but Chungmu gimbap is an exception. The vinegar added to the squid and radish gives a bright sourness to it, but since it’s served on the side in spicy sauce, the gimbap itself doesn’t go bad.
