Mix in some water and knead the mixture into a tight dough. Cover the dough with a damp cloth and set it aside for 15-20 minutes. Now, take some dough and roll it into a cylindrical shape. Cut it into 2 cm-sized pieces. Take one portion and roll it into an oval shape. Cover it with a damp cloth and set it aside for 5-10 minutes. Another way to make puris is by taking the dough and rolling it into a flat sheet. Cut out round shapes using a cutter. Place them on a plate, cover with a damp cloth, and set aside. Heat oil in a deep pan, add the rolled puris, and deep fry them until they turn crispy and brown. Deep fry the puris over medium-low flame. Your puris are now ready. Pani Puri Masala: Heat a pan, add jeera, black pepper, and dry red chillies. Roast them. Transfer the roasted ingredients to a mixer jar. Add salt, black salt, dry ginger powder, amchur powder, and tatri powder. Grind them into a fine powder. Your pani puri masala is now ready. Pani Puri Stuffing: In a bowl, add diced boiled potatoes, boiled vatana, black salt, pani puri masala, and chopped coriander. Mix them together. Your stuffing is now ready. Set it aside. For Flavoured Pani: In a mixer jar, add fresh coriander, mint leaves, ginger, green chillies, black salt, pani puri masala, ice cubes, and water. Grind them together. Now, transfer the mixture to two separate bowls. Spicy Pani: Take one bowl of the mixture, add black salt, pani puri masala, hing, lemon juice, chilled water, and boondi. Mix it well. Your spicy pani is now ready. Mitha Pani: Take the other bowl of the mixture, add black salt, pani puri masala, mithi chutney, lemon juice, chilled water, and boondi. Mix it well. Your mitha pani is now ready. Assembly: Gently crack open a puri from the top center. Add some potato stuffing inside the puri. Dip it into the mithi chutney. Fill the puri with your desired flavoured pani – either the spicy one or the mitha one. Serve and enjoy! Subscribe to my channel here : https://www.youtube.com/channel/UCjC5zJ25kXB0mwKxi4erOrg
