This was created as a call for summer and is probably one of my lightest and freshest creations. It is composed of a fresh naval and caracara orange compote, an orange cremeux, a Joconde sponge soaked with a caramel made in the spirit of a crepe Suzette, flambee with Cointreau liquor, a light orange mousse and overall topped with an orange flavored glaze. All the decorative elements are crafted out of colored white chocolate. Who's ready for summer?
