There are instances when the number of leaves on the lime trees outnumbers the number of fruits. I recall how we used to be when we were younger. Grandmother used to make lime pickles out of all the extra lime tree yield. She makes lime pickles in a variety of ways. I like to create these by boiling limes in a solution of vinegar, lime juice, salt crystals and chilli flakes, primarily because, unlike other lime pickles, this method does not necessitate sun drying the limes for an extended length of time. In the family house garden, I noted that the musk-lime trees are overflowing with fruit. So I brought my brother and a large basket with me and gathered a giant basket full of musk-limes and made my favourite lime pickle(lunu dehi) in the most convenient way for me as well. This time, the musk-limes are quite sour, and despite my want to gather them all from the tree, their sourness caused my mouth to quiver all over. These musk limes have a therapeutic quality that can help people suffering from phlegm conditions. They are instructed to cut a slice of musk lime and bite it combined with peppercorn, keeping it inside the side inner jaw. It's akin to retaining phlegm inside the jaw to get rid of it. In general, I make the pickle by boiling the limes and cutting each fruit into four wedges without separating. the most difficult part is filling the gaps with salt crystals and chilli chunks. My brother, as usual, assisted me by grumbling and complaining. Even my grandmother came to aid me in the end. We got to try a fantastic mocktail produced by my brother near the finish of the work. His drink mixed with pomegranate and white pepper powder provided us with an extraordinary essence of energy and zest. If made correctly, this lime pickle can be preserved and utilised for more than a year, but unfortunately, keeping them that long with our loving brother is exceedingly tough. He always pulls the bottle from the shelf and adds a bit of pickle to every rice plate. well, after all, it was meant to be eaten, right?. After a few days, I had an interesting idea to make a crab devil by combining the lime pickle with Blue crabs. When we incorporate sour components into seafood recipes, their taste transports you to another world. I added a handful of moringa leaves to the crab dish to temper the heat. it really doesn't matter whether I have already added a lime pickle to this dish as my brother began to enjoy the wonderful and rich crab meal and devoured another piece of a musk -lime pickle with the full plate of rice.
