For the mango coconut masala, take chopped raw mango pieces, grated coconut, curry leaves, mint leaves and coriander leaves in a mixer jar. 2. Grind them all into a coarse paste without adding water. Keep it aside. 3. For the tempering, add oil to a pan. 4. Add in chana dal, urad dal, mustard seeds, cumin seeds and peanuts. 5. Once the mustard seeds start splattering, add in red chillies, hing and curry leaves. 6. After the rawness in peanuts is all gone, add in the ground mango coconut paste and cook for 2-3 mins. 7. Add in rock salt and cook for 5 mins on a medium low flame. 8. Add in turmeric powder and mix. Once the moisture is gone, add in the cooked rice. 9. Mix the rice with coconut mango masala gently. 10. Mango coconut rice is ready to be served hot and nice with potato chips or fry by the side. Mango coconut rice is a nice, flavourful variety rice recipe. This is an easy recipe which is great for lunchboxes or even simple dinners. You can make this rice with freshly cooked rice or even with leftover rice if you want. The main ingredients in this recipe are mango and coconut. We first have to make a nice mild mango coconut south indian style masala and then blend it with cooked rice.
