簡單家常的高麗菜炒雞肉,如何炒出蔬菜的香味跟層次感,一定要學起來! 『蘿潔塔的廚房』高麗菜時蔬炒雞肉準備食材: 雞腿肉一份 約300克 高麗菜 約300克 紅蘿蔔 50克 青蔥 兩株或蒜苗一株 蒜頭 3瓣 辣椒 一條 (不吃辣可省略) 洋蔥一小顆 青江菜 3兩株 鹽、胡椒 調味 雞胸肉醃漬材料: 一小撮鹽、一小匙糖、 一小匙白胡椒粉、 醬油5cc、清酒1大匙、味醂5cc 太白粉水(太白粉7克+水10克) 芝麻油抓勻 做法: 1. 將雞胸肉洗淨切成條狀,加入所有醃漬材料,醃漬 15 分鐘以上。 2. 青蔥切成段、蒜頭拍裂開來、辣椒切成片、紅蘿蔔切片、洋蔥切成粗絲,青江菜切成三段。高麗菜去梗切成大塊狀。 4. 鍋子燒熱,加入適量的橄欖油,將醃好的雞肉入鍋煎出表面的焦香、等到表面呈金黃色,推到一邊去。 5. 放入蔥段、辣椒、蒜頭爆香,接著再跟雞肉翻炒均勻。 6. 放入紅蘿蔔片跟高麗菜梗,接著放入青江菜梗跟洋蔥,一點鹽、白胡椒調味,翻炒均勻。 8. 加入所有的高麗菜,先蓋上鍋蓋悶一分鐘左右,趁蓋鍋蓋的時候搖晃鍋子,讓高麗菜翻動,快點軟化。 9. 開蓋後輕輕地翻動一下,依照自己喜歡的高麗菜熟度決定起鍋的時間。 10. 起鍋前加入青江菜葉,輕輕的翻炒一下,鹽巴 胡椒調味,就可以起鍋囉!! ★喜歡我創作的料理影片嗎?不要忘了訂閱我的頻道喔~ https://www.youtube.com/@RosalinaKitchen 追蹤我的Instgram: https://www.instagram.com/rosalina.kitchen/ 追蹤我的Facebook: https://www.facebook.com/rosalinakitchen/
