Ingredients - 7g instant dry yeast - 480ml warm water - 25g olive oil plus extra for brushing - 780g bread flour plus extra for dusting - 10g honey - 7g table salt Method 1. To make the dough, start by adding the warm water to a bowl with the yeast, honey, salt and olive oil and mix until the yeast and honey are dissolved. 2. Add the flour and use a wooden spoon to mix until combined. 3. Once the dough is a shaggy mess, remove it from the bowl and place it onto a floured surface and knead for 8-10 minutes or until smooth. 4. Drizzle some oil in the bowl that you mixed the dough in originally, place the dough back in the bowl, cover it with a tea towel or cling film and leave it in a warm place to double in size. This will take around 1 hour. 5. After the hour, turn the dough out onto a floured surface and knead all of the air out that has accumulated. Cut this into 12 even pieces then, using the palm of your hand, roll into tight balls. 6. Roll each ball out to around 20-25 cm in diameter and cook immediately. 7. You can either cook these in a pizza oven or if you don't have a pizza oven, a large cast iron pan in your kitchen oven set at 250°c works well also. 8. They won't take long to cook in the pizza oven (they took about 60 seconds) but if you're using your kitchen oven they might take an extra 60 seconds. 9. Once they're out of the oven, serve warm, filled with fresh mozzarella, tomato and basil or anything your heart desires!
